1 tortilla
1 Tab. Olive oil
1/2 cup Ricotta
3-4 oz. Shredded Mozzarella
1 tomato, thinly sliced
Fresh Basil leaves
Salt and pepper, to taste
Brush tortillas with oil. Spread on ricotta, sprinkle on mozzarella. Top with tomato slices. Bake 5-8 minutes. While hot, sprinkle with Basil leaves, salt and pepper. Serve.
