 Sesame Asian Noodle Salad Freezer Meal







Serves 50 (1 cup servings)

Sesame Asian Noodle Salad consists of whole-grain noodles, chicken breast, and vegetables, with a hint of orange flavor.


Ingredients

2 Tbsp Ginger, fresh, minced  
1 1/2 cup Rice vinegar
1 cup Soy sauce, low-sodium
1/2 cup Orange juice
4 oz 1/4 cup Honey
1 1/2 cups each Canola oil AND Sesame oil OR 3 cups Canola oil, only
1 tsp Garlic powder
2 lb 8 oz Edamame, frozen
3 lb 2 oz  Chicken, cooked, diced, 1/2" pieces
1 cup Sesame seeds
10 quart freezer bags
5 labels
stapler to staple the bags together


Assembly
  1. To make dressing, combine ginger, rice vinegar, soy sauce, orange juice, honey, oil, and garlic powder in a blender. Blend for 2 minutes at medium speed. Pour dressing into a container.
  2. Cook edamame according to package directions. Rinse with cold water. Drain well.  
  3. If Chicken is not cooked, cook the chicken. Put 10 oz. chicken into each of five quart freezer bags. Remove excess air and seal.
  4. Add 8 oz. edamame and 3 rounded Tablespoons of sesame seeds to each of 5 quart freezer bags. Divide the dressing as evenly as possible between the bags. Remove excess air and seal.
  5. Attach together 1 bag of chicken and one bag of the edamame in sauce together by stapling them above the fold, label and freeze.

Ingredients for Cooking Day

  • 10 oz Spaghetti noodles, whole-wheat, gluten free or regular
  • 4 oz Carrots, fresh, shredded
  • 3 oz. Red cabbage, fresh, shredded
  • 1/3 cup Red onion, fresh, sliced, thin


Cooking Instructions

  1. Heat 2 water to a rolling boil. Slowly add pasta. Stir constantly until water boils again. Cook about 8 minutes or until al dente. Stir occasionally. DO NOT OVERCOOK. Rinse with cold water.
  2. Combine the contents of the freezer bag with carrots, cabbage, and onions, together in a large bowl. Add pasta and chicken. Mix well. Serve.
  3. To make vegetarian, leave the chicken out separately and have individuals add it to their salad, as desired.
