- salt, to taste
- black pepper, to taste
- 8 slices sourdough bread or other country-style loaf
- ¼ cup mayonnaise
- 1/4 cup butter or margarine
- 1 pound sharp white cheddar, shredded
Cooking Instructions

- Heat a skillet over medium heat.
- Spread the butter over 1 side of each of the bread slices, this will be the side exposed to the heat.
- Once the skillet is heated, place butter side down on the skillet for both slices.
- Spread the mayonnaise on the top side of the bread.
- Place each piece of cheddar cheese on top of the mayonnaise.
- Add the tomatoes to only one bread slice.
- After about a minute, place the bread slice, without the tomato’s on top of the tomato half, making the sandwich.
- Mash the sandwich together with a spatula, and let cook for an additional minute.
- Serve immediately.
