Vegetable Soup

 2 1/2 Tab Olive oil

1 1/2 cups diced onions

4 garlic cloves, minced

3 lbs. Mixed Vegetables

50-60 oz. Broth

2 (15 oz.) cans Italian Stewed Tomatoes

1 (6 oz.) can Tomato Paste

2 Bay leaves

1/3 cup fresh parsley

1/2 tea. Dried Thyme

2 tsp. Salt

1 tsp. Pepper

1 1/2 Tab.  Grated Parmesan (optional)

Saute onions in large pot. When soft, add garlic and cook 1-2 minutes. Add vegetables and saute a few minutes. Add remaining ingredients. You can add the Parmesan to the soup now or sprinkle on top of soup when serving. Bring to a boil and simmer 30 minutes.
