Sriracha Roasted Cauliflower and Chickpea Sheet Pan Freezer

 Sriracha Roasted Cauliflower and Chickpea Sheet Pan Meal

Serves 4

Ingredients

  • 1 head cauliflower chopped into florets

  • 15 oz. chickpeas rinsed and drained

  • 1 1/2 Tbsp. olive oil

  • 3/4 tsp. sea salt

  • 3/4 tsp. pepper

  • 2 Tbsp. sriracha

  • 2 Tbsp. low-sodium soy sauce

  • 1 Tbsp. maple syrup

  • 2 tsp. apple cider vinegar

  • 2 tsp. ginger grated

  • 1 tsp. sesame oil

  • 1 bunch green onions chopped

  • 1 large (gallon) freezer bag or reusable silicone bag

  • 1 medium (quart) freezer bag

Preparation

  1. In a large freezer bag, combine cauliflower florets, chickpeas, olive oil, salt and pepper. Place the remaining ingredients in a medium sized freezer bag.

  2. Remove excess air from both bags. Seal, staple bags together above the seal and freeze.

Cooking Instructions

  1. Thaw. 

  2. Empty the large bag on a baking sheet. Bake at 450° for 20 minutes.

  3. Toss with sauce. Set the oven to broil and broil for 6-7 minutes.
